Flavor Focus: Yuzu Type, NFB

Yuzu Type, NFB- Item Code #7519

Yuzu is a citrus fruit that has gained popularity in recent years. It is about the size of an average lemon, has an uneven texture, and a unique flavor profile that is fragrant and tart, resembling grapefruit. It is believed that yuzu originated from the upper river basin of the Yangtze River in China. Through the years this bright yellow fruit made its way to Japan and Korea[1]. Today, Yuzu is considered one of Japan’s favorite citrus fruits.

According to Mintel, Japanese cuisine and flavors are trending in the United States, which has led to increased interest in Yuzu [2]. At the same time, consumers are demanding beverage and dairy products with a natural tartness. As a result, Yuzu was one of the fastest-growing citrus fruit flavors in beverage launches from 2015-19 [3]. The increased demand for citrus flavors and specifically Yuzu can be attributed to a desire for less-sweet, fresh, and tart flavors. This trend can also be seen in dairy products, where consumers are seeking refreshing flavors [4]. As this trend grows, there is an opportunity for dairy companies to use flavors such as Yuzu to meet consumer demand.
